How to Explain Honey Quality and Storage to Customers

Part of good honey presentation includes a brief explanation of its natural properties. Quality honey is not "watery" – it shouldn't splash or flow too quickly in the container. When tilted, it rather slowly pours and when dispensing creates typical "ribbons" (layering on itself). A natural property of real honey is also crystallization, which is not a defect but rather a common sign of its authenticity.

Crystallization speed is mainly influenced by the ratio of fructose and glucose. Floral honeys usually crystallize earlier, while honeydew (forest) honeys remain liquid longer. If the customer prefers liquid honey, it can be gently returned to its original state by gradual heating in a water bath up to 45°C. Store honey in this container ideally in a dry and dark place, at temperatures up to 15°C, to best preserve its natural properties and biologically active substances.
